Seafood dishes are one of the most nutrient-dense foods, an important source of omega-3 fatty acids, essentials for overall health. Director of Culinary, Chef Robert Nilsson, a Swedish native, has created three Nordic gastronomy inspired seafood items with salmon, tuna, and shrimp, good for eyes and the appetite.
Seared tuna rolled in crushed chickpeas with grilled broccoli tapenade and crispy kale provides a myriad of textures, with the juicy flavoursome tuna wrapped in a crunchy layer of chickpeas and grilled broccoli tapenade, a delicious gluten-free treat.
A creative twist in the traditional Nordic open-faced sandwiches, Salmon gravlax with pickled beetroot, cottage cheese and rye bread is an attractive treat with a palate of pink, orange and green, filled with the freshness of salmon which is enhanced by the slightly tangy cottage cheese.
Crushed avocado with shrimp in shiso ponzu, bell pepper, spring onion, crispy tortilla enables you to indulge in mouth-watering tastes, starting from the creamy avocado, to the crispy veggies and tortilla, not to mention fresh shrimp drizzled with shiso ponzu, which gives off floral notes of citrus fruits. Other savory items include the Instagram-friendly Beetroot hummus with pomegranate kernel and grissini, bite-sized Quinoa salad with mushroom and poached quail egg in an edible-spoon and the attention- grabbing Grilled zucchini in bun, pesto and mozzarella cheese.

As for dessert, executive pastry chef Baptiste Villefranque has come up with just the solution by creating super-food packed desserts that you can indulge in guilt-free. Chia seeds contain an abundant source of anti-oxidants and nutrients. Added into the dessert, Coconut and fresh raspberry chia seed pudding, this vegan option is added to coconut paste and raspberry puree, striking the right balance of sweet and sour. Topped with crispy coconut flakes, this is surely a tempting treat. Being one of the world’s healthiest food, avocados are not only tasty but also contains abundant nutrients, including some that help lose weight.
Chef Baptiste has creatively included avocado into Avocado goji berries chocolate brownie, thus making it more chewy and fudgy in the center. Toppings of goji berries which helps boost immunity function in the body are added as the ‘icing on the cake’. This treat is an absolute must-try for all health-conscious brownie lovers out there. Manuka honey Greek yogurt and almond granola provides a delicious combination of crunchy granola bits and creamy Greek yogurt mixed with sweet natural honey. The honey-yogurt combination is not only tasty, this mixture will aid your body in achieving ideal digestion.
These treats include the rich gluten-free Black sesame yogurt and tofu, wholesome Oatmeal with dry cranberries energy lollipop and sumptuous Blueberry earl grey and lemon poppy seed cake.
