Pretty in Pink for or breast cancer-fighting




In support of the annual Breast Cancer Awareness month, Café 103 at The Ritz-Carlton, Hong Kong launches “Pretty in Pink” afternoon tea to raise awareness for breast cancer-fighting initiatives. The afternoon tea set will be available from October 1 to November 30, 2018.  

Executive Pastry Chef Richard Long and his team have created a menu featuring rose-tinted desserts, savory delicacies and mocktails. The afternoon tea set features a total of 10 pieces of sweet and savory pink delights. 


“The starting point of my design process is to find ingredients that are naturally pink or red to create mouth-watering desserts that are also visually impactful,” says Chef Richard. 

He masterfully transformed the natural coloring of fresh ingredients into rosy-hued surprises. The Lychee Rose Tarte, for example, features layers of lychee mousse, rose gel and rose petal mousse. 




The “Baba” Red Berries is a sweet treat to please your taste buds and eyes. The delectable red berry compote, featuring strawberry and raspberry puree with lemon zest, is topped with the “Baba” bread soaked in berry syrup. 
For berry lovers  the Raspberry Yoghurt features three layers of sponge cake, three layers of raspberry confit and vanilla yoghurt mousse rendered in an alluring pink glaze.  For the savory dishes, the pink hue is also referenced in photogenic bite-sized delights. 


The Black Truffle Beetroot Egg Salad Mini Bun puts a pink twist on the traditional egg salad sandwich while the Pink Caviar Remoulade Crab Salad Swiss Roll surprises gourmets with a savory interpretation of the classic cake roll.
