Alessandro Cozzolino, the real Italian touch at Grissini

Not easy to find a real Italian tradition in food. That's why Alessandro Cozzolino is one of the best Italian chef in town and very appreciate for this authentic mediterranean touch.

In 2017, Chef Alessandro has been named as ‘Chef of the Year’ by Gambero Rosso and under his supervision, Grissini has received the highest Three Forks recognition at Gambero Rosso 2017; the only Italian restaurant outside of Italy to receive this honour. Grissini, opened for more than 20 years, is offering the chance to taste both traditional and innovative Italian dishes. Hailing from Caserta, Campania, Chef Alessandro has an endless passion for gastronomy.

For him, cooking is about bringing people together to savour the comforting flavours of home cooking.  He enjoys being innovative whilst respecting culinary tradition.   The ’Italian Itinerary”, tasting menu signed by Cozzolino, includes traditional dishes such as La Zuppetta di Pomodori dell’Agro Sarnese Nocerino, Gli gnocchi cacio e pepe con frutti del Mar Mediterraneo e la Capasanta Ammaritata.  Other dishes include la Parmigiana di Melanzane, Gamberi Rossi di Sicilia, burrata alla caprese and Tarallo.

The secret of his success are the ingredients, very selective and particular. Cozzolino spends a lot of time trying to source the best produce from Italy and the Mediterranean Sea, which inspires him to create unique dishes. All with great respect for traditions and origins.

Alessandro says: " I translated my skills into an exciting menu highlighting the best flavors of the Mediterranean tradition. But, I'm proud to reinterpret dishes that utilize special Italian products. I am very selective about ingredients. So, I prefer to Ito source the best produce from Italy, which inspires me to create unique dishes. For example, ‘pasta e patate' to my grandmother’s homemade gnocchi, and pasta al Pomodoro with Piennolo tomatoes from Vesuvio".
